Risk-taking and daring to open new worlds of sensations are part of DIVINEO’s DNA. This is why we took on a new challenge: creating a white wine from black grapes.

 

Eclipse Boréale made by Seiichi is a great, complex wine, with a creamy mouthfeel that presents notes of tarte tatin, white flowers and a long finish with fine bitterness.

A four-hands creation

I worked this grape variety instinctively, in the most natural way possible, without chemical inputs, with less than 10 mg of sulfur per liter with the desire to create a living wine.  

 

I carried out spontaneous vinification with native yeasts and aging for 18 months in old Burgundy barrels.

The clay-limestone terroir with “rolled stones” enjoys a Mediterranean climate with cool nights.  

 

I do not use any chemical fertilizers, pesticides or herbicides. I work in organic farming and agroforestry, and harvest by hand while respecting living things.
