I worked these two grape varieties in the most natural way possible, without chemical inputs, with less than 10 mg of sulfur per liter with the desire to create a living wine.
I carried out spontaneous vinification with native yeasts and aging for 12 months in old Burgundy barrels.
I do not use any chemical fertilizers, pesticides or herbicides. Produced in certified organic farming and agroforestry, I harvest by hand while respecting living things.
The Marnes Blanches et Jaunes terroir enjoys a Mediterranean climate with cool nights.
Our tasting notes
The color is gold with gray highlights.
The nose is citrus, kaffir lime, lemony, with notes of very fine and precise jasmine flower.
The palate is intense and fresh with a salivating and saline finish.
